What are your favorite (easy) plant-based cookbooks? Bonus if they have a section for cook ahead meals that store well for a few days! Would be great to make ahead for my fam and let them reheat.
Just want to say I’m also interested in this thread and super open to ideas for cookbooks. Especially with Mushrooms. I do believe the Fantastic Fungi people are coming out with a Mushroom Cookbook, eager to see if Eugenia talks about it in the Panel on Friday.
